Crusets are a simple dish that has made a name for itself today as a sought-after course on the tables of the restaurateurs of the Stura Valley. The special way the mixture is processed gives it a certain similarity to Apulian orecchiette. But the originality lies in the two traditional sauces with which crusets are paired.

If you find yourself in the mountains of the Stura Valley, you can certainly order an excellent plate of crusets in the many local restaurants and trattorias. This is a tasty first course typical of the Stura Valley. Prepared using only wheat flour, water, salt and a few eggs, their particularity lies in the fact that they are shaped entirely by hand. The dough is in fact forged by expert fingers that, with the wisdom of tradition, give the crusets their particular shape with curled edges.

They look very similar to Apulian orecchiette, since both share the same hollow shape. This resemblance is perhaps linked to a legend or even history. It was in fact Queen Giovanna I of Anjou who exported this curious pasta shape from one end of Italy to the other in the second half of the 14th century. The Angevin noblewoman was not only the first ruler of Naples and wife of Louis of Taranto, but also Countess of Provence. The legendary connection between crusets and orecchiette is thus attributed to her distinguished titles, which encompass such distant territories.

The condiment that accompanies this dish is typically indigenous and linked to traditional Stura Valley cuisine. Crusets come with two sauces: one made with leeks and potatoes and the other called bagna grisa. The first is a condiment made with Cervere leeks, potatoes, some meat stock, a drizzle of extra virgin olive oil and a sprinkling of thyme. Bagna grisa, on the other hand, is a sauce with chunks of matured cheese and cream, which are melted in fried onion, garlic and milk.
