Raviòles. Potato gnocchi mixed with Toma cheese, a special dish prepared during the days of Baìo, the carnival to commemorate the expulsion of the Saracens. They have an elongated shape, sort of like a wool spindle, and are seasoned with lots of browned butter and grated cheese. 
 

Toumin dal Mel cheese. Soft, raw cow milk cheese with a possible addition of goat milk not exceeding 10%. It has a sweet and delicate taste when fresh, that gets tastier as it ripens. The best is the one with a soft, uniform paste, without bubbles inside. The quality and market excellence of this product led to the establishment of a special consumer protection Consortium in 2007. In this valley there are also Costigliole apricots, Cuneo PGI chestnuts, Tomino del Bot cheese, herb liqueurs, medicinal herbs, Quagliano and Pelaverga wines and craft beer. 
 

Special local dishes: raviòles al burro soffritto (ravioli seasoned with browned butter), torta di patate e formaggio (potato and cheese tart), tartrà con funghi (mushroom pudding).
