Entracque potatoes. Mountain potatoes have something extra to offer. They are cultivated naturally, thanks to the good soil structure and cool climate. The organoleptic characteristics benefit from this, so they have an intense flavour and longer shelf life. 
 

Mediterranean brown trout (the Queen’s trout). They are named after Queen Elena of Italy, who was a passionate fisherwoman. The upper Valle Gesso has been the holiday resort of the Savoy family for many years. It is a natural habitat of fresh and well oxygenated water for an aquaculture that respects the environment and human health. A safe product of high nutritional standards to put on the table. 


In this valley we can also find chars, roaschina sheeps, bushmeat, mushrooms, mountain cheeses, Tomini cheese, and craft beer. 


Special local dishes: cojette con salsiccia (potato gnocchi with sausage), tagliatelle ai funghi (tagliatelle with mushrooms), zuppa di trote (trout soup), civet di camoscio (chamois civet), minestra di riso e castagne (rice and chestnut soup), torta di riso (rice tart), cipolle ripiene (stuffed onions)
